Friend’s Of Willard Brook Winter Carnival Black Bean Soup

 

Visitors loved the black bean soup at Winter Carnival.  If you would like to cook some up for yourself, here’s the recipe:

 

2/3 cup chopped onion (chop very fine)

4 cloves of minced garlic

1 TBS ground cumin

1/4 tsp to 1/2 tsp. of red pepper flakes

3  15-oz cans of black beans

1 1/2 cups chicken or vegetable broth

1 to 2 cups of mild (or medium if you want it hot)

               chunky salsa

2 TBS fresh lime juice

 

Sauté onion, garlic, cumin and pepper flakes in a

little vegetable oil until the onion is soft.

Add the beans, chicken broth, salsa, lime juice and

simmer for 30 minutes.  Taste to correct the

seasoning. Add more salsa or red pepper flakes

if you want it spicier.  If it is too thick you can

add a little more broth.  It should be thick but able

to be ladled out.
